The Very Best Mashed Cauliflower

Bold statement eh? Well… these mashed glories are a hormone diva’s dream. High in fiber and healthy fats and hormone boosting crucifers and phytoestrogens… they are at least as good as the potato version! And… they won’t derail your holiday dinner!

Servings: 6-7

Ingredients

  • 1 big head of cauliflower (or 2 small heads)

  • 3 cloves garlic

  • 1/4 cup tahini

  • 1/2 cup unsweetened non-dairy milk (I prefer almond, make sure there is no vanilla or other flavorings)

  • 2 tbsp freshly chopped parsley (chives work here as well)

  • Drizzle of olive oil and sea salt to taste

Instructions

  1. Add 2 inches water to your favorite pot with steamer basket and heat on high to boiling.

  2. Meanwhile chop cauliflower into chunks (beautiful florets are not necessary because these are going in the food processor!). Peel and chop garlic. Add cauliflower and garlic to steamer basket.

  3. Steam for 4-5 minutes until tender. Drain.

  4. Place in food processor with tahini, non-dairy milk and pulse to a creamy mash.

  5. Add sea salt to taste

  6. Serve with fresh parsley and a drizzle of olive oil.
