Edamame Snack Mix

Savory and low-starch, this easy-to-make, high fiber snack mix is great for boosting bone health. Edamame, almonds and sesame seeds all contain calcium AND magnesium!

Ingredients

  • 2 cups edamame, defrosted from frozen, shelled (organic)

  • 1 cup almonds, raw

  • 1/4 cup sesame seeds

  • 1 tablespoon gluten free tamari (or coconut aminos)

  • 1 teaspoon extra virgin olive oil

Instructions

  1. Preheat oven to 350 degrees.

  2. Pat edamame dry with towel to remove as much moisture as you can (makes them crunchier!)

  3. Mix all ingredients in a bowl. Spread on a baking sheet.

  4. Toss after 10 minutes and return to oven.

  5. Bake for another 5-10 minutes until puffed and lightly browned.

  6. Allow to cool and enjoy fresh!

  7. You can store in fridge and “toast up” the next day as well.
