Strawberry Chia Jam

Try this super scrumptious low-glycemic, high fiber treat in berry season (or anytime). Strawberries are rich in Vitamin C and many anti-oxidants and their juicy vibrancy is such a great welcome to summer. Spread on crackers with goat cheese or toast with almond butter for a truly splendid snack!

Ingredients

  • 2 cups fresh strawberries (or frozen) - organic preferred - cut in half if large, stem tops removed

  • 3 tablespoons chia seeds

  • 1 tablespoon lemon juice

  • 1 tablespoon maple syrup

  • 1 tsp cinnamon

Instructions

  1. Heat berries in a small saucepan on medium high heat for 5-7 minutes until soft and liquidy. If you prefer your jam smooth, you can press berries down with a potato masher.

  2. Lower heat and add seeds, lemon juice, syrup and cinnamon and stir until well combined.

  3. Turn heat off (or remove pan from burner) and let sit for 5-7 minutes.

  4. Place in a glass or steel lidded container (like a Ball jar) in the fridge for about 30 minutes or overnight.

Enjoy on toast with almond butter or mixed with yogurt or on crackers with goat cheese. Spread keeps in a tightly lidded jar for about one week.
