Raspberry Chia Parfait

High in fiber, antioxidants and omega-3s, this berry-rich breakfast pudding will lift your brain fog and energize your mind and mood.

Serves: 2

Ingredients

  • 1 cup unsweetened almond milk

  • 1/4 cup chia seeds

  • 2 tsp cinnamon

  • 1 tsp vanilla extract

  • Optional: 2 scoops collagen peptides

  • 1 cup raspberries (fresh or frozen and thawed)

  • 1/4 cup walnuts

Instructions

  1. In a bowl, mix together the almond milk, chia seeds, vanilla and cinnamon. Whisk until well combined.

  2. Let the mixture sit for 30 minutes at room temperature or cover and store in the fridge overnight.

  3. Once it has thickened up, layer chia pudding into single-serving (1/2 pint) mason jars or containers. Add a layer of raspberries and sprinkle with walnuts. Eat right away or seal jars and store in the fridge for up to 4 days until ready to eat. Enjoy!
